Italian Drunken Noodles is a rich and savory fusion dish that combines wide pasta noodles, Italian sausage, peppers, tomatoes, and fresh herbs—all simmered in wine for a deep, comforting flavour. It’s an easy one-pan meal perfect for busy weeknights or cozy family dinners.

Ingredients

  • For the Pasta Dish:
  • 12 oz (340g) wide pappardelle or egg noodles

  • 1 lb (450g) Italian sausage (mild or hot), casings removed

  • 2 tablespoons olive oil

  • 1 medium onion, thinly sliced

  • 3 cloves garlic, minced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 cup cherry tomatoes, halved (or 1 can diced tomatoes)

  • ½ cup dry white wine or red wine

  • ½ teaspoon crushed red pepper flakes (optional)

  • 1 teaspoon Italian seasoning or dried oregano

  • For Garnish:
  • ¼ cup fresh basil or parsley, chopped

  • Freshly grated Parmesan cheese

Directions

  • Cook the Noodles
    – Bring a large pot of salted water to a boil.
    – Add noodles and cook according to package directions until al dente.
    – Drain and set aside.
  • Cook the Sausage
    – Heat a large skillet over medium-high heat.
    – Add olive oil, then Italian sausage.
    – Break it apart with a spoon and cook for 5–7 minutes until browned.
    – Transfer the cooked sausage to a plate and set aside.
  • Sauté the Vegetables
    – In the same pan, add onions and peppers.

  • Combine Everything
    – Return the sausage to the skillet.
    – Add cooked noodles and toss to coat well.
    – Cook for 2 more minutes to blend flavors.
  • Garnish & Serve
    – Top with chopped basil or parsley.
    – Sprinkle with fresh Parmesan before serving
