Instructions

  1. Prepare the Pan

  2. Mix Dry Ingredients

    In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
  4. Add Wet Ingredients
    Mix in lemon juice, lemon zest, Greek yogurt, and vanilla until smooth.
  5. Combine Batter
    Gradually add dry ingredients to wet ingredients, mixing just until combined.
  6. Fold in Blueberries
    Toss blueberries with 1 tbsp flour, then gently fold into the batter.
  7. Bake
    Pour batter into prepared pan. Bake for 50โ€“55 minutes, or until a toothpick comes out clean.
  8. Cool & Glaze
    Cool loaf completely. Whisk glaze ingredients and drizzle over the top. Sprinkle with lemon zest if desired.
