Amish Snow Day Soup is a cozy, creamy blend of potatoes, corn, carrots, and celery — the perfect comfort food for cold winter days. Simple, hearty, and full of homestyle flavor, it’s a bowl of warmth straight from the heart of Amish country.
Ingredients
2 tablespoons butter
1 tablespoon olive oil
1 medium onion, chopped
2 garlic cloves, minced
2 medium carrots, diced
2 celery stalks, diced
3 medium potatoes, peeled and cubed
2 cups corn kernels (fresh, frozen, or canned)
4 cups chicken or vegetable broth
1 cup whole milk or cream
½ teaspoon dried thyme
Salt and pepper, to taste
2 tablespoons flour (for thickening, optional)
Chopped parsley, for garnish
Directions
- 1. Sauté the Vegetables:
In a large pot, heat butter and olive oil over medium heat. Add chopped onion, carrots, and celery. Cook for 5–6 minutes, stirring occasionally, until softened and fragrant. - 2. Add Garlic and Potatoes:
Stir in minced garlic and cook for another 30 seconds. Add the cubed potatoes and corn, tossing everything together. - 3. Pour in Broth:
Pour in chicken or vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and let simmer for 15–20 minutes or until the potatoes are tender. - 4. Add Creaminess:
In a small bowl, whisk flour into the milk (if using) and pour it into the soup. Stir continuously until the soup thickens slightly and becomes creamy. - 5. Season and Serve:
Add thyme, salt, and pepper. Simmer for 5 more minutes, then garnish with fresh parsley before serving.
Notes
- For a richer flavor, use half-and-half or heavy cream instead of milk.
- Add cooked bacon or ham for a heartier version.
- If you prefer a smoother texture, blend part of the soup before serving.
- This soup pairs beautifully with buttery biscuits or Amish white bread.
