Ingredients

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 2 medium carrots, diced

  • 2 celery stalks, diced

  • 3 medium potatoes, peeled and cubed

  • 2 cups corn kernels (fresh, frozen, or canned)

  • 4 cups chicken or vegetable broth

  • 1 cup whole milk or cream

  • ½ teaspoon dried thyme

  • Salt and pepper, to taste

  • 2 tablespoons flour (for thickening, optional)

  • Chopped parsley, for garnish

Directions

  • 1. Sauté the Vegetables:
    In a large pot, heat butter and olive oil over medium heat. Add chopped onion, carrots, and celery. Cook for 5–6 minutes, stirring occasionally, until softened and fragrant.
  • 2. Add Garlic and Potatoes:
    Stir in minced garlic and cook for another 30 seconds. Add the cubed potatoes and corn, tossing everything together.
  • 3. Pour in Broth:
    Pour in chicken or vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and let simmer for 15–20 minutes or until the potatoes are tender.
  • 4. Add Creaminess:
    In a small bowl, whisk flour into the milk (if using) and pour it into the soup. Stir continuously until the soup thickens slightly and becomes creamy.
  • 5. Season and Serve:
