Classic New York–Style Cheesecake Recipe

Introduction

Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar

  • 32 oz (900 g) full-fat cream cheese, softened
  • 1¼ cups granulated sugar
  • ¾ cup heavy cream
  • 1 tablespoon cornstarch (or 2 tablespoons flour)
  • 1 teaspoon vanilla extract
  • 4 large eggs, room temperature
  • 1 tablespoon lemon juice (optional, for brightness)

Instructions

  1. Prepare the Crust
    Preheat oven to 325°F (165°C).
    Mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a greased 9-inch springform pan. Bake for 10 minutes, then let cool.
  2. Make the Filling
    Beat cream cheese until smooth and creamy. Add sugar and mix until fully combined.
    Blend in heavy cream, cornstarch, vanilla, and lemon juice.
  3. Add Eggs
    Add eggs one at a time, mixing on low speed just until incorporated. Do not overmix.
  4. Bake
    Pour filling over the crust and smooth the top.
    Bake for 60–70 minutes, until the edges are set and the center slightly jiggles.
  5. Cool Slowly
    Turn off oven, crack the door open, and let cheesecake cool inside for 1 hour.
    Remove and cool completely at room temperature, then refrigerate at least 4 hours (overnight is best).
