Greek Stifado (Traditional Beef & Onion Stew)

Introduction

Greek Stifado is a classic slow-cooked stew known for its deep, comforting flavors. Tender beef is gently simmered with whole pearl onions in a rich tomato and wine sauce, infused with warm spices like cinnamon and cloves. This iconic Greek dish is hearty, aromatic, and perfect for cozy family meals, especially when served with crusty bread or mashed potatoes.


Ingredients

For the Stew

  • 2 lbs (900 g) beef chuck, cut into large cubes
  • 3 tbsp olive oil
  • 1ยฝ lbs (700 g) pearl onions, peeled
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes or tomato passata
  • ยฝ cup red wine
  • ยฝ cup beef stock or water
  • 2 tbsp red wine vinegar
  • 2 bay leaves
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 tsp sugar (optional, to balance acidity)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

1. Brown the Beef

Heat olive oil in a heavy pot or Dutch oven over medium-high heat.
Brown the beef in batches until well colored on all sides. Remove and set aside.

2. Sautรฉ the Onions

In the same pot, add the pearl onions and sautรฉ until lightly golden. Add garlic and cook for 30 seconds.

3. Deglaze

Pour in red wine and vinegar, scraping the bottom of the pot to release flavor. Let simmer for 2โ€“3 minutes.

4. Build the Sauce

Add crushed tomatoes, stock, bay leaves, cinnamon stick, cloves, sugar (if using), salt, and pepper. Stir well.

5. Simmer Slowly

Return the beef to the pot. Cover and simmer gently over low heat for 1ยฝ hours, stirring occasionally, until the beef is tender and the sauce thickens.

6. Finish & Serve

Remove bay leaves, cinnamon stick, and cloves. Taste and adjust seasoning. Garnish with fresh parsley before serving.
