Description
This one-pot soup is incredibly easy to prepare and packed with nourishing ingredients. The sausage adds a delicious depth of flavor, while the potatoes and vegetables make it satisfying and wholesome. Serve it with crusty bread for a complete and comforting family meal!

Ingredients

  • 1 lb (450g) Italian sausage, casings removed

  • 1 tablespoon olive oil (if needed)

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 2–3 medium carrots, sliced

  • 3–4 potatoes, peeled and diced

  • 1 can (14.5 oz / 400g) diced tomatoes

  • 4 cups (1 liter) chicken broth

  • 1 cup water (optional for consistency)

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and black pepper, to taste

  • 2 cups fresh spinach leaves

  • Fresh rosemary or thyme for garnish (optional)

Directions

  • Brown the Sausage:
    Heat a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles as it cooks.
  • Sauté the Aromatics:
    If needed, add a little olive oil. Stir in diced onion and carrots, cooking for 4–5 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  • Add Potatoes & Tomatoes:
    Add diced potatoes and the canned tomatoes (with juice). Stir to combine.
  • Add Broth & Simmer:
    Pour in chicken broth (and water if needed). Season with oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until potatoes are fork-tender.
  • Add Spinach:
    Add spinach and cook for 3–5 minutes, just until wilted.
  • Adjust & Serve:
    Taste and adjust seasoning. Ladle into bowls and garnish with fresh rosemary or thyme if desired. Serve warm!
