Introduction

Ingredients

For the Pasta

  • 400g linguine
  • Salt, for boiling

For the Caprese Sauce

  • 3 tbsp extra-virgin olive oil
  • 3 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • ยฝ cup fresh basil leaves, torn
  • 1 cup mozzarella pearls (or diced fresh mozzarella)
  • 1โ€“2 tbsp balsamic glaze (optional but recommended)
  • Extra olive oil, for drizzling

Instructions

1. Cook the Linguine

  • Bring a large pot of salted water to a boil.
  • Add the linguine and cook until al dente, following package instructions.
  • Reserve 1 cup pasta water, then drain the pasta.

2. Prepare the Tomato Base

  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sautรฉ for 30 seconds (donโ€™t brown it).
  • Add cherry tomatoes, salt, pepper, and dried oregano.
  • Cook for 5โ€“6 minutes, lightly pressing the tomatoes so they release their juices.

3. Combine Pasta & Sauce

  • Add the cooked linguine directly into the skillet.
  • Toss well, adding a splash of pasta water to help coat the pasta.
  • Fold in fresh basil leaves.

4. Add Mozzarella

  • Remove skillet from heat.
  • Add mozzarella pearls and gently toss (the mozzarella should soften but not fully melt).

5. Serve

  • Drizzle with extra olive oil.
  • Add a swirl of balsamic glaze on top.
  • Garnish with more fresh basil.
