Ingredients

For the Stuffed Calamari

  • 1ยฝ lb (700 g) fresh calamari (squid), cleaned

  • 3 tbsp extra virgin olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1ยฝ cups crushed tomatoes (or passata)
  • ยฝ cup water or seafood stock
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

1. Prepare the Filling

In a bowl, combine breadcrumbs, Parmesan, garlic, parsley, egg, olive oil, chopped tentacles, salt, pepper, and chili flakes. Mix until moist but not wet.

2. Stuff the Calamari

Gently fill each squid tube about โ…” full (do not overstuff or they may burst). Secure the opening with toothpicks.

3. Start the Sauce

Heat olive oil in a wide pan over medium heat.
Add onion and sautรฉ until soft, about 5 minutes. Add garlic and cook for 30 seconds.

4. Simmer

Stir in crushed tomatoes, water or stock, salt, and pepper. Bring to a gentle simmer.

5. Cook the Calamari
